Day 4 - Falafel King

D and I just finished dinner and had the realization that we've successfully prepared raw dinner 4 nights in a row. Yeah! He said it may be the longest stretch since we've lived in our apartment (August) - whoa - didn't think we ate out that much. It's funny how you don't realize how often you do something until you stop doing it... like coffee... you don't think you have an addiction til someone takes it away. Or sweets... or salt...

Today was a good day, I had a delicious Raw bar for lunch that I'll tell you about later. D has officially lost about 8 pounds and I'm down about 1.5 -- hmm sounds about right. Energy level is about the same, but I am not experiencing that 2:00 coma...you know when you're sitting at work after lunch and you just want to take a nap. Not I...



NOW FOR THE MAIN EVENT....(cue trumpets!)

We just had one of the best raw meals ever, and I'm not talking about just in the last 4 days. We've been raw dabblers for almost 2 years...and this meal is way up there on the grand list.

Raw Falafel Wrap
adapted from Rawkin beanless falafel recipe.
2 c. soaked Almonds
3/4 c. Cilantro
4 tbsp Lemon Juice
2 tbsp Tahini (I used sesame seeds)
1 tbsp Olive Oil
1 1/2 tsp ground Cumin
1 tsp Sea Salt
3/4 c. Water

Blend ingredients until smooth, then spoon balls onto teflex sheets. Dehydrate overnight, then flip in the morning and remove teflex (to dehydrate directly on racks).

I made a quick cucumber "Jerusalem" salad with cilantro and a bit of the leftover alfredo sauce to make it a touch creamy. A shot of apple cider vinegar and a little drizzle of olive oil, so easy. It adds a nice freshness to the falafel wrap.

As promised we gave the raw hummus another try. Honestly, I got hints of the unripe/bitter flavor here and there, but overall the spices of the falafel balls really mellowed out the hummus a lot. We ate our wrap on a leaf of Swiss Chard "king vegetable" as it's called. I will never ever miss my beloved fried falafel as long as we can eat this. SUCCESS!


Tomorrow night we're going out to eat for a friend's birthday. It'll be our first restaurant visit since being raw. I called ahead to order special salads with no dressing - so we should be good to go. I'll report back with the results...my biggest worry is that it'll be awkward that we have to eat "special" food. But they're good friends so they'll get over it =D

  2. Planning to bring our own. Lots of dressings are loaded with sugar or dairy, I just prefer to know what's in it. If I'm lazy in the morning, we'll probably just ask for oil/vinegar =)
