Day 2 - Cut Me Some Flax

Happy Day 2! Things are much the same as yesterday, I'm not super hungry or having any wacky cravings thus far. Feeling good and excited about making more snacks today.

SIDE NOTE: Manly metabolism is just bonkers - D lost 4 pounds after one day raw! I should be so lucky...

So here is a peek at the Flax Crackers that I've been working on the last couple days. And by "working on" I mean soaking, dehydrating and eating.


Soak: I soaked the seeds in water overnight (water line above the seeds) and they sucked up ALL the water by the morning. Ooey gooey flax paste, yum!

I mixed salt and pepper into the batch for added flavor, I think I'll try curry powder or rosemary next.


Dehydrate: Spread the flax across the teflex sheets so it doesn't fall through the cracks of the regular rack. This batch made 3.5 sheets worth. Dehydrate overnight. Flip the crackers in the morning so the other side has a chance to dry out as well. 
(So this turns into a 2-day process by default)



The final product is like a giant cracker, woohoo! Break it up and sample.










To go with my crackers, I decided to make a Spicy Cilantro Dip using my leftover "Alfredo" sauce from last night...ooh la la mexicana. The flavors in the sauce were subtle enough that the spices didn't clash.

Spicy Cilantro Dip
Leftover "Alfredo sauce"
Handful of fresh Cilantro
1 Jalapeño
1/2 Lemon
1/2 tsp Cumin (to taste)

Mix all ingredients into your existing sauce. Voila! A little cumin goes a long way; this spread is like a creamy chili dip that should be laden with cheese and dairy, but it's not! Add more jalapeño for extra heat. 

FYI - hot peppers are supposed to help with circulation, and this winter I'm definitely in need...

Dare I say...I like this one more than the original alfredo =D



Check back tomorrow for a raw experiment with Garbanzo Beans...I'm soaking those suckers as we speak.
